Kimchi Coleslaw

Ingredients:

  • For the slaw:
    • 1 cup kimchi, roughly chopped
    • 3 cups green cabbage, finely shredded
    • 1 cup purple cabbage, finely shredded
    • 1 large carrot, julienned
    • 3 green onions, thinly sliced
    • 2 tbsp toasted sesame seeds
    • ½ cup crispy fried shallots or crushed wonton strips
  • For the sesame dressing:
    • 3 tbsp mayonnaise
    • 1 tbsp kimchi juice (from the jar) –-> kimchi sauce
    • 1 tbsp rice vinegar
    • 1 tsp bibigo Sesame Oil
    • 1 tsp honey
    • ½ tsp freshly grated ginger

Step 1 – Make the dressing: In a small bowl, whisk together mayonnaise, kimchi juice, rice vinegar, sesame oil, honey, and grated ginger until smooth and well combined. The kimchi juice adds incredible depth of flavor and a beautiful pink hue.

Step 2 – Prepare the vegetables: In a large mixing bowl, combine both cabbages, julienned carrot, and sliced green onions. Add the roughly chopped kimchi and toss gently to distribute evenly.

Step 3 – Dress and chill: Pour the sesame dressing over the slaw mixture and toss thoroughly until every ingredient is evenly coated. Refrigerate for 10 minutes to allow flavors to meld beautifully.

Step 4 – Add crunch and serve: Just before serving, top generously with toasted sesame seeds and crispy fried shallots or crushed wonton strips for that signature satisfying crunch.
