Ssamjang Glazed Chicken Skewers

Ingredients:

  • For the skewers:

    • 400g boneless chicken thighs, cut into bite-sized cubes
    • 1 red bell pepper, cut into large chunks
    • 2 thick green onions, cut into 3cm pieces
    • Wooden skewers, soaked in water for 30 minutes
  • For the ssamjang glaze:

    • 3 tbsp Haechandle Ssamjang
    • 2 tbsp honey
    • 1 tbsp bibigo Sesame Oil
    • 2 cloves garlic, minced
    • 1 tbsp water

Step 1 – Make the glaze: In a small bowl, whisk together ssamjang, honey, sesame oil, minced garlic, and water until smooth and well incorporated.

Step 2 – Marinate the chicken: Place chicken cubes in a bowl and add half of the prepared glaze. Mix well to coat and marinate for at least 20 minutes. Reserve remaining glaze for basting.

Step 3 – Assemble the skewers: Thread marinated chicken, bell pepper chunks, and green onion pieces alternately onto soaked wooden skewers.

Step 4 – Cook the skewers:

  • Grill method: Preheat grill to medium heat. Grill for 12-15 minutes, turning occasionally until cooked through.
  • Pan method: Cook in a grill pan over medium heat for the same duration.
  • Oven method: Bake at 200°C (390°F) for 15-18 minutes.
